I have this symbol on my dashboard and I’m not sure what it means. It’s the one on the right side of the display.

You can usually find the manual online for free, just search for it. Most are in PDF format, easy to check on your phone.
Ford stopped including paper manuals with newer models. You can get it online at www.ford.co.uk/support/owner-manuals or use the FordPass app by registering your VIN.
Most new Fords have the manual hidden somewhere in the infotainment system. But yeah, you can find it online. And yes, that symbol is for lane keeping. You can usually toggle it on or off using the button on the end of the turn signal lever or on the center console.
Yeah, it would be really strange if Ford didn’t upload all their manuals online. Even older models should be there, from 1997 to now. Everything is on the internet these days.
If you look on the Ford UK site, they should have a lot of manuals available for download.

Pretty sure it’s lane assist. If it’s on but inactive, that’s probably because you’re driving at a low speed. Try pressing the button on the end of the left stalk, it should toggle it on and off.
